Eureka! I have found it.
I was under no illusions when I founded Tacos & Pho that a restaurant serving both tacos and pho actually existed. In fact, until last night, I never thought tacos and pho would ever be served under the same roof, but I was wrong.
As the Mayor of HeidiTown, I have been helping spread the word about the Grand Opening of Spa Monarch at Monarch Casino Resort Spa in Black Hawk, Colorado. Everything is now open at the Monarch Casino Resort Spa including a real Sportsbook (insert applause here). There’s a grand opening party today and tomorrow (March 4-5, 2022).

I was invited to a media progressive dinner last night at Monarch Casino. Lo and behold, what did I find? Not only delicious tacos at Bistro Mariposa, which just opened two weeks ago but both tacos and pho at the Monarch buffet.
That’s right, there is a pho station at the buffet AND tacos. Plus, everything else you might want such as all sorts of meats, cheeses, fried chicken, crab legs, salad, and so on and so forth. They even have ramen. Yes, ramen. Seriously, be hungry when you come here because the Monarch Casino buffet has all the things.
We were having dessert at the buffet and had already eaten our weight in food at the Monarch Casino’s restaurants, but I was very excited at this revelation. Tacos and pho together!
I did not take pictures of the pho or ramen as most of it is behind glass, but the taco area was expansive.
At Bistro Mariposa, a place we will definitely go back to, they brought out live-edge wooden trays covered in tacos. The carne asada tacos are so darn good. This place also has an excellent tequila list (which really made Ryan happy).
Plus, it’s at the end of a long hall so whether you’re dropping in for a dinner with the family or just a drink at the bar, it’s far from the hustle and bustle of the casino floor.
I had not intended to write about this outing here on TacosandPho.com, but after my find, I had to.
