Confession time. I’m usually here at least twice a month on Tuesdays. I shop at the King Sooper’s grocery store that is located next door, so, in my taco-obsessed head, it makes perfect sense to combine the trip.
I took Ryan there for lunch today and every seat was taken, including the two tables outside. The fast and furious business being done there probably has to do with Mi Tierra’s taco Tuesday deal. Every Tuesday their tacos are $1.25 each. That’s right, $1.25 each! And they are so good.

The taco meat is a little crunchy. I literally crave it. I also crave their al pastor tacos. I got a carnitas today, in addition to my al pastor, and it was scrumptious. I will definitely add that to my taco repertoire at Mi Tierra. Ryan was impressed and especially loved his al pastor tacos. Seriously, they are good!
Obviously, we got in after a small wait (the food comes out fairly fast). This place isn’t fancy and it’s located in a strip mall west of downtown Windsor. Patrons order at the counter. Mi Tierra has some traditional Mexican standbys like menudo (not my favorite) and posole (a definite favorite).
They serve red and green salsa. I like them both, but I will warn you that when they say “the red is hot,” they aren’t lying. It’s hot, and that’s coming from a gal who loves anything spicy.
By the way, we’re at the height of harvest season here in Colorado, and on the way home, I stopped at Chapman’s Produce. This is a super swell place for veggies, especially tomatoes, and I wish I had discovered it sooner.
