I’m big on ambiance and this place has it in spades. I love the tiny patio, but inside, the bar is pretty chill too. Mojo Taqueria has that “we’re pretty cool without trying” feel.
I have a soft spot for restaurants in houses, so when I saw Los Rudo’s Tacos y Hot Dogs was located in a cute Johnstown bungalow, I was extra excited (I am always excited about tacos).

Until last night, I never thought tacos and pho would ever be served under the same roof, but I was wrong.
I can’t seem to keep up with new restaurant openings. Kujira Ramen opened a year ago in Fort Collins, and I just discovered it yesterday.
A longtime Mexican food restaurant in Berthoud opened a spot in Loveland and we finally went, on Valentine’s Day.
I do not claim to know much about Asian or Mexican cooking—I am an infant when it comes to Asian food and a toddler when it comes to tacos—but I know that expanding my culinary mind has helped me cope with this never-ending pandemic.
